Homemade strawberry popsicles with PipingRock chia seeds

Now that warmer weather is rolling in, is there anything better than a refreshing frozen treat to beat the heat? You might be saying “no,” but we think that these homemade strawberry chia seed ice pops definitely change the game. This simple four ingredient recipe is not only sweetened with honey (or agave) instead of regular sugar, it’s also packed with all of the nutrients of delicious fresh fruit and one of our favorite super foods – chia seeds!

These simple pops are easily customized for your favorite fruits and ingredients.

Strawberry Chia Seed Popsicles

Ingredients

  • 2 ½ cup fresh strawberries, hulled
  • 1 tablespoon lemon juice
  • 1 tablespoon Allulose sweetener
  • 2 tablespoons chia seeds

Instructions

  1. Place strawberries, lemon juice, sweetener, and chia seeds in a blender and puree.
  2. Pour several tablespoons into individual popsicle molds, following the manufacturer’s instructions (If you’re not using molds, we’ve found paper cups with popsicle sticks work well and a slice of lemon around the middle of the stick can help stabilize the popsicle sticks and make a cute garnish).
  3. Freeze overnight (or for a minimum of 4-5 hours)
  4. Serve & enjoy!
